We as human beings are always looking for new things to brighten up our lives with. One thing we all particularly enjoy experimenting with is Food.  We all have our very own odd food combinations for instance I feel very proud to have come up with pound cake and crisps. The thing is that we all love to cook & take risks while doing so. It’s that huge grin on your family’s face that is the ultimate validation that the risk has paid off. Now my family is not a huge fan of blue cheese in my fridge which had been there since the past 3 months, was really getting on my nerves. So I decided to finish the story for once & for all. Although the process was a little time consuming. I must say that it was worth it. I took a risk and blue cheese is definitely on my next month’s grocery list. After searching on the internet, I found out that blue cheese and chocolate have a similar chemical composition which is why they work so well together. There you go, a scientific explanation to back up this odd flavor combination.


BLUE CHEESE ICE-CREAM:

Ingredients:

Blue cheese – 1 cup

Cream – 2 cups

Condensed milk – 1 can

Sugar – 3 to 5 tbsp

For Dark Chocolate Ganache:

Dark chocolate (good quality) – 2 bars

Cream – 1/2 cup

Cocoa powder (unsweetened, good quality) or dutch processed cocoa – 1/4 cup

Milk – few tbsp

Method:

Bring 1 cup of cream to a gentle simmer and add the blue cheese. Let it simmer for a few minutes and then take it off the heat. Whisk t simmer for a few minutes and then take it off the heat. Whisk to ensure that all the cheese has melted. Whip one cup of cream and then add the cream and cheese mixture along with the condensed milk and sugar. Fold and pour into an airtight container. Freeze it for 6-7 hours.

Method for Dark Chocolate Ganache:

Warm the cream gently and then pour over the chocolate pieces. Mix till all the chocolate has melted. Add the cocoa powder and whisk till well combined. Pour the mixture back into the pan and gently warm it. Add a few tbsp of milk to loosen the mixture. Serve hot.

Serve the ice-cream with hot chocolate ganache and nuts of your choice.
